RECIPE// Berries + Cream Baked Oats

Winter has officially hit Victoria this week with freezing temperatures and chilly winds making it hard to get out of bed, and our wonderful Gippsland Jersey dairy farmers braving those harsh conditions to get our milk produced!

Porridge has got to be one of our favourite winter foods - highly nutritious, versatile, comforting and delicious!

It’s no secret that the best porridge starts with premium oats and high quality milk - it’s a simple recipe that can be made even better by choosing the right ingredients. That’s why we’ve teamed up with Dad’s Oats this week to bring you one of our family favourites - Berries and Cream baked oats. 

Dad’s Oats use the finest Echidna Oats known to grow in Australia and have done so over five generations on their family farm on the foothills of the Pyrenees Ranges in North Central VIC. They have many synergies with the Gippsland Jersey story, and were the perfect choice to bring this delicious recipe to life! 

Baked Oats is one of those recipes that you can make on a Sunday and feed your family, or put in the fridge to last throughout the week. You can stick with a basic recipe or customise it with a variety of flavours - we’ve tried berries + cream, banana and peanut butter, apple and cinnamon just to name a few! Just know that it’s a cheap, nutritious and delicious way to feed the family. Try it - you won’t be disappointed!

RECIPE// Berries + Cream Baked Oats

Serves 6-8
Cooking time: 30-40 mins to bake
Prep time: 15 mins

Ingredients

  • 1 cup of Gippsland Jersey Milk
  • 1 cup of Gippsland Jersey Cream
  • 3 tablespoons melted Gippsland Jersey cultured butter
  • 1 large egg
  • 1 tsp vanilla extract 
  • 2 ½ cups of traditional Dad’s Oats
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tablespoon chia seeds
  • Pinch of sea salt
  • 2 cups of frozen berries
  • ½ cup shredded coconut 

Instructions

Preheat oven to 180C.

Combine milk, cream, melted butter, egg and vanilla extract in a jug or bowl. Whisk to combine.

In an oven safe baking dish, combine traditional oats, brown sugar, baking powder, chia seeds and a pinch of salt. Mix together. 

Pour wet milk and cream mixture over oats mixture and stir to combine. Add 1 cup of frozen berries and mix well. 

Top with remaining frozen berries and shredded coconut. Bake in oven for 40 mins or until golden brown. 

Serve with a generous squeeze of honey and a drizzle of milk or cream.
